 Rubbed with garlic, topped with basil pesto, oven-dried tomatoes, Oaxaca and Cotija cheeses

 Fresh field greens, red and yellow tomatoes, spicy pecans and crumbled goat cheese drizzled with balsamic vinaigrette dressing

-Seared Tuna Tostadas
 Adobo seasoned Ahi seared rare, served atop crispy corn tortillas with drunken bean puree and sweet mango chile salsa

 Quarter pound braised short ribs brushed with Pasilla short rib glaze served with andouille corn pudding and fresh vegetables

Question: How long have you been a chef?
Answer: 5 years
 
Question: How long have you been at this restaurant?
Answer: January 16th 2012 will be my first day at House of Blues Anaheim but I have worked at The House of Blues Houston for over three years
 
Question: Who or what inspired you to become a chef?
Answer: My passion for food
 
Question: What do you enjoy most about your profession?
Answer:  That no day is ever the same.  Every day is a new challenge and never gets boring
 
Question: When you’re not in the kitchen what are you doing?
Answer: I spend most of my free time with my fiancé exploring the city we live in.
 
Question: What is your most popular dish?
Answer:  My Enchiladas
 
Question: Your last meal on Earth would be??
Answer:  A Kim chi Quesadilla with a side of Bouguli Fries.
