Question: How long have you been a chef?
Answer: 12 years

Question: How long have you been at this restaurant?
Answer: 8 years (since opening)

Question: Who or what inspired you to become a chef?
Answer: Passion for family and food. I have been cooking from a very young age with family and most of my family are all cooks as well.

Question: What do you enjoy most about your profession?
Answer: Serving others. When I serve something I always try and use the freshest local ingredients and knowing that the guests enjoy our cuisine is what makes me love my job. In the summer we served over 1016 meals in one day over 4th of July weekend. I loved every minute of it!

Question: When you’re not in the kitchen what are you doing?
Answer: Spending time with family and playing soccer.

Question: What is your most popular dish?
Answer: Our tacos. We originally started with Local Halibut tacos at Mosaic and over the years this has become our most popular dish, Each summer we serve as many tacos as everything else combined. We served over 2000 in July alone last summer. Now our menu has grown to include Blackened Ahi and Shrimp tacos as well.

Question: Your last meal on Earth would be??
Answer: Tacos!!! Carne Asada all day!

Question: What's your favorite item on the Restaurant Week Menu?
Answer: Seafood, seafood, seafood.
