Question: How long have you been a chef?
Answer: 9 yrs

Question: How long have you been at this restaurant?
Answer: 1.25 yrs 

Question: Who or what inspired you to become a chef?
Answer: My upbringing truly trained me to become what I have.  Looking back, I have been pointed towards the culinary direction from childhood.  Some of my youngest memories are cooking with my dad, mom, uncles and aunties. 

Question: What do you enjoy most about your profession?
Answer:  I LOVE FOOD!!!  Being a chef is a challenging type of fun.  You are put in the position, day in and day out, to be tested and see who you are and what you are capable of.  Besides the fact that in most other careers you are not able to express creativity or who you are.  To be a “Chef” means many different things besides the obvious: Teacher, Mentor, Manager, Friend, and at times Counselor.  I love the relationships made with guests and employees.  I love it all!

Question: When you’re not in the kitchen what are you doing?
Answer: I would say I spend the most amount of time playing with my daughters or spending time with my wife.  We spend a lot of time at the park, pool and beach.  Other than that, I do normal everyday things.  I cook and clean, do laundry, watch the occasional Food Network show or movie, hang out with friends and family, read cook books (mainly I look at the pictures), and a small amount of gardening (mostly flowering and tropical plants and succulents). 

Question: What is your most popular dish?
Answer:   Here at Tommy Bahama the guest favorite is our Ahi Tacos.  Guest love the flavors, textures and visual presentation of this dish.  The tacos are very light but have bold, well balance flavors.  We often have guest order multiple orders to eat as an Entrée.

Question: Your last meal on Earth would be??
Answer:  Simple…Garlic Fried Rice and Chinese Black Bean Chicken Feet. 

Question: What's your favorite item on the Restaurant Week Menu?
Answer: All of them.  If we didn’t love it we wouldn't bother making it.  You will taste the difference a little bit of Aloha makes.
